Yogurt Smoothie and Banana Bread
One of the hardest parts of parenthood is taking care of your sick baby! It's so heartbreaking to see them in pain! My little monkey is coping with his first ear infection. He didn't present the "normal" signs (ear pulling/tugging), but instead has diarrhea, low grade fever, and a runny nose. Doctor prescribed him antibiotics (though he doesn't know if it's bacterial or viral, so who knows if it'll help), which isn't helping his whole pooping problem (side effect of ab's is diarrhea). My baby has been on the BRAT(Y) diet (bananas, rice, applesauce, toast, and yogurt) for a couple days now is getting REALLY bored with it - who could blame him. So, in efforts to "spice" his menu up a bit I came up with some creative recipes.
Yogurt Smoothie and Banana Bread.
Doctor wants him to stay away from a high fat and sugary diet (not that he was on that before), while continuing his bland diet. So, here are my recipes:
Yogurt Smoothie
2-3 tablespoons of greek yogurt
1/3 ripe banana
A couple dashes of cinnamon
A couple dashes of fresh nutmeg
**next time I'll add some white grape or apple juice to thin it out and add more sweetness**
Blend in a cuisinart/blender until smooth
Place in child's favorite cup and serve!
Max thought he was getting a special treat!
Banana Bread (no oil and low sugar recipe)
4 ripe bananas
1/4 cup sugar
1/2 cup applesauce
1 tablespoon vanilla extract
2 eggs
1 teaspoon baking soda
1 tablespoon baking powder
1 teaspoon salt
1 cup all purpose flour
1/2 cup spelt
1/4 whole wheat flour
1/4 flax meal
Preheat oven to 350
Place all wet ingredients, including bananas and sugar, into a large mixing bowl or a KitchenAid stand mixer and mix until blended. In a separate bowl blend together all dry ingredients. Add dry ingredients too wet and mix until well combined.
Poor prepared mixture into a 9 x 5" loaf pan that has been greased.
Place dough loaf into oven and cook for 45 to 55 minutes or until a toothpick is inserted and when removed is clean.
Cool and enjoy!
This bread turned out surprisingly sweet! Max LOVES it!
