Serina's Brilliant Whole Grain Waffles


Growing up I lived in a world without frozen dinners, white bread, and capri suns - no this is not at all an exaggeration nor is it a complaint - I loved growing up eating healthy!  My mom did a wonderful job teaching us kids (me and my brother and sister) the importance of a well balanced diet...it is a virtue I would love to instill into my son!

I must preface that not everything we ate as kids was super yummy.  I have not so fond memories of the dreaded whole wheat waffle breakfast. You know the ones I'm talking about...thick, dense, and have the same consistency and taste of cardboard!  Not my favorite breakfast item!  Ever since I was little I've had an aversion to whole wheat waffles - sorry mom.  This all changed when I received a recipe from my good friend and chef, Serina.  When she offered to share her Whole Grain Waffle recipe with me, I must admit I was apprehensive to try it (refer to my dread of the cardboard), but Serina assured me it would be nothing like the whole wheat waffles I remembered.  She couldn't have been more right... light, fluffy, full of flavor and great texture...they are AMAZING!!!  They are now a favorite Sunday breakfast item at my house.  Serina has given me the go ahead to share her recipe with you all - you will not be disappointed!!!   Enjoy!

1 1/2 cups yogurt (I use greek, as it's what I usually have on hand for Max)
1 egg
1 teaspoon vanilla
1/4 cup vegetable oil

Mix wet ingredients together


1/2 cup corn flour
1/4 cup whole wheat flour
1/4 cup flax meal
1/2 teaspoon sea salt
1/2 teaspoon baking soda
1 teaspoon baking powder

Mix dry ingredients together and add to wet. 

Pour into favorite waffle iron, cook, and enjoy!

  1. I have saved this to my recipe file. Let me know if you made any changes to the recipe. I must add I no longer make those awful whole wheat waffles! I use Snoqualmie Falls Lodge Old Fashioned Pancake and Waffle Mix. I will try this recipe and may have to change over!

    1. Serina said that she sometimes subs out coconut oil for the vegetable oil...this would be a good substitution according to the link you just posted to my FB page. Coconut oil can be kind of expensive, especially if you buy organic, but I've found it at Winco (organic) and Ross (believe it or not and it's also been organic). I usually have it on hand because I use it instead of diaper cream on Max's bum : )
