Lesson Learned!





One of my main goals in creating this blog is to discover and create meals that will both satisfy mine and my husbands appetites, while providing a balanced meal that is also kid friendly.  Well, tonight's meal wasn't so much a success as it was an UTTER FAILURE at trying to achieve those goals!! Please do not be deceived by the happy baby picture above.  

Tonight's menu: baked tofu with peanut sauce, over a bed of basmati rice and fresh spinach, with applesauce on the side.  Sounds yummy, right?....Lets start from where it all went wrong...in hopes to make my life easier, I pre-made the peanut sauce yesterday.  After much tasting and frustration over why it tasted so awful, I finally discovered I forgot an ingredient (did I mention that I lack the ability to follow directions!)...after another trip to the store and some lemon juice the sauce was "reinvented" into a version of what my mom made for me a couple weeks prior (I must add my mom's tasted better, but doesn't everything your mom make taste better!)  So, today I pulled out the near to perfect peanut sauce and decided I would bake the tofu with it (this is something that I do with store bought peanut sauce all the time) - WRONG DECISION - the once complex flavors of the peanut sauce have now evaporated into a congealed mess of what I can only describe as peanut butter baked over tofu!  Not only did it look like dog food, but I don't think the flavor was far from it either (not that I'm a connoisseur).  By the by, the side of applesauce to accompany our meal never made it's appearance at the dinner table...apparently someone put it in the cupboard after making blueberry zucchini bread this weekend...can I blame my mommy brain...how long until that is no longer a socially acceptable excuse?  My son threw all his tofu on the floor, but who could blame him, it was a hot mess!  Though he did eat his rice, it was the only thing that turned out great (did I forget to mention that my husband made it?), well and the spinach turned out wonderful, but it was raw.  My husband, bless his heart, ate dinner without complaint (yes, he loves me that much!) and my son enjoyed peas, carrots, black bean, greek yogurt, and watermelon - none of which were on tonight's menu.  




**Lessons Learned:  Follow directions (you'd think I'd have learned this one by now), pan fry tofu with oil of choice, place over bed of basmati rice, THEN pour desired amount of prepared peanut sauce (preferably acquired from Grammy's kitchen earlier in the day)...and always, ALWAYS put applesauce in the refrigeration after opening!!!...Lesson Learned**

  1. OMG I am so sorry it didn't work out. We will have a peanut sauce class tomorrow when you come over :-)
