Steel Cut Oats

Weekends are a whirlwind of crazy.  Depending on how the week goes, my to do list may get pretty lengthy by the time the weekend arrives...My husband loves his Max one on one time, so I can tackle the usual suspects of domestic chores (that have fallen to the wayside during the week), which puts me into crazy banshee mode!  Running around the house with projects started everywhere, with the hopes that I'll be able to at least finish one before the day is out.  I am notorious for creating "to do lists" just for the shear pleasure of crossing items off once complete - regardless of how insignificant it might be, at least by the end of the day I can relish in my success (even if the only thing I crossed off the list was checking the mail).

Today I was able to tackle some of my pre-cooking while also getting the opportunity to watch the Oregon Football game!  Huge success!!!  Not only for me, but also for the Ducks because, they kicked some Colorado butt!!!!

Steel Cut Oats (Ben's breakfast)

1 1/2 cups steel cut oats
4 1/2 cups water
2 dices apples
palm full of cinnamon
2-3 dashes of nutmeg
1 tablespoon of vanilla

Place all ingredients into a large pot.  Bring to boil and reduce heat to simmer for 20-30 minutes, stirring pretty frequently, until water is absorbed and oats are cooked to taste.



After 30 minutes I place cooked oats into 7 half pint mason jars. 



NOTE:  Next time I will only make 1 cup of oats to 3 cups water, and 1 apple.  My goal is to make 5 half pint mason jars - one for each day of Ben's work week.  

Personally I like my oats with some rice milk, fresh berries, and brown sugar, but Ben prefers his "dry" - oats are extremely versatile...try adding dried fruit, nuts, fresh blueberries, bacon (hee hee) the list is endless.  Now that I've tried steel cut oats, I don't think I'll ever go back to oatmeal!  Yes, they are a bit more time consuming than oatmeal or malt-o-meal but well worth the extra effort - both in taste and nutrition. By the by, if you don't have 20-30 minutes to stand by the stove, try the "quick cook overnight" method.  Simply bring 4 cups of water to a boil, add a cup of oats, cook for one minute, place lid on pot and put in the frig.  The next morning simply heat thoroughly for about 7-10 minute and enjoy!

  1. I think you must get the list making from me! I keep a pad of paper on my desk while I am working and am constantly adding the things I need to do and purchase at the store :-)

    Does Ben like raisins? I also like to add raisins to my oatmeal along with my apples.
